I love, love sweet potatoes, and as such, every opportunity to eat them becomes an adventure. On a particular quarantine day, I just fried a few pieces and ate them with steamed vegetables. This is really a filling meal due to the high fiber content of the sweet potato. Plus, the little frying adds a little crunchiness that I was so deeply craving at that time. Try it nuh!
INGREDIENTS
- 1 – 2 medium sweet potatoes.
- 5 ounces of pumpkin.
- ½ of a cabbage.
- A few stalks of scallion/green onions.
- Sufficient oil for frying.
- Seasonings to taste:
- Garlic powder
- Onion powder
- Paprika
- Salt to taste.
INSTRUCTIONS
- Peel and slice sweet potato to your likeness (not too thin).
- Wash and slice pumpkin and cabbage.
- Wash and slice scallion/green onions.
- Place a frying pan on the stove over medium heat.
- Add oil.
- Fry potato slices.
- Cook vegetables to preferred firmness.
- Serve and Enjoy!
Notes
You can bake the potatoes if you choose, it is just as nice.
