Okra Punch Recipe – It’s all about the Fiber!

Want a fiber boost?  Why not give this punch a try?  While Okra is often used in stews, soups and fish dishes, it is a wonderful vegetable to add to your smoothies lineup. 

INGREDIENTS

  • 3-6 small okras.
  • 2 ½ cups water.
  • ½ – 1 cup milk (I used coconut milk).
  • ½ tsp vanilla
  • Your choice of sweetener (I like honey or dates).

INSTRUCTIONS

  • Rinse and cut heads and tips off okras.
  • Add okras and water to a pot.
  • Cook okras until soft.
  • Remove from stove and let cool.
  • Add water and okra to the blender.
  • Add vanilla, milk and sweetener.
  • Blend until completely smooth.
  • Serve and Enjoy!
  • You can add ice or place it in Refrigerator for a little chilling.
Notes:

It’s best to use okras that are not tough.  Tough okras may signify that they are old, which will cause the punch to become string-like and have little unblended pieces.  If that happens, strain it before drinking.

~ Okra~

Okra or ‘ladies’ fingers’ is a hairy finger-shaped vegetable that is very popular in English-speaking countries. Almost all parts of this little weird-shaped vegetable are edible from its leaves, flowers and stem to its pods and seeds.  

Okra is a vitamin and mineral powerhouse and is very high in fiber. 1 cup of okra contains over 3.2 grams of fibers.  Other nutritional properties include folate, vitamin K, Vitamin A, Vitamin C and Pyridoxine (B6).  It also contains minerals such as Calcium, Magnesium and Potassium. Why not give this punch a try?
