INGREDIENTS
- 1 ยฝ cup leftover white rice (I used leftover, frozen basmati rice)
- 2 cups of water (more if needed)
- 1 ยฝ cups milk (I used unsweetened almond milk)
- 1 cinnamon stick or 3 cinnamon leaves
- ยผ teaspoon grated nutmeg
- 1 teaspoon vanilla extract
- ยผ teaspoon salt
- 2โ3 tablespoons condensed milk, brown sugar, honey, or sweetener of choice (optional)
Optional Toppings
- Raisins
- Sliced banana
- Chopped nuts
- Additional cinnamon
- Fresh fruit
INSTRUCTIONS
- Thaw rice if frozen
- Place a medium-sized pot on the stove with ยฝ cup of water and a cinnamon stick or leaves.
- Bring to a slight boil
- Add rice, milk and water to the blender
- Blend until smooth, then add to the pot with water and stir
- Stir well to prevent clumping.
- Add more water if needed (if too thick)
- Let it cook for about 5 minutes
- Add condensed milk or another sweetener to taste
- Add salt and vanilla extract.
- Continue to stir to ensure ingredients are blended properly
- Add nutmeg (grated)
- Stir again and let it cook for another 5 โ 10 minutes
- Serve and enjoy as is or with preferred toppings
My Shortcut: Using Leftover Frozen Rice
This version of rice porridge is a little different from the traditional method. Instead of starting with uncooked rice, I used cooked rice that had been frozen and stored in the freezer.
After thawing the rice, I blended it with some almond milk and a little water until smooth before adding it to the pot. Not only did this save time, but it also created a wonderfully creamy texture without having to simmer the rice for a long period.
I especially love this method because it helps reduce food waste. If you have leftover rice from dinner, simply freeze it and use it later to make a quick breakfast porridge.
It’s a simple reminder that some of the best recipes can come from ingredients you already have on hand.
