INGREDIENTS
- 3 medium-sized carrots, peeled and chopped
- 2 cups milk (I used unsweetened almond milk)
- ½ cup carrot cooking water (more if needed)
- 1 teaspoon vanilla extract
- ¼ teaspoon grated nutmeg
- ¼ teaspoon of cinnamon
- Pinch of salt
- 3 tablespoons condensed milk (optional)
- Sugar to taste (if you do not use condense milk)
INSTRUCTIONS
- Peel and chop the carrots into small pieces.
- Place them in a saucepan and add enough water to cover.
- Bring to a boil and cook until the carrots are soft and tender, about 15–20 minutes.
- Reserve ½ cup or more of the cooking water before draining.
- Allow the carrots to cool slightly.
- Add the cooked carrots, reserved cooking water, milk, vanilla, nutmeg, cinnamon, salt, and condensed milk (if using) to a blender.
- Blend until smooth and creamy.
- Taste the punch and adjust the spices if desired.
- For a richer and sweeter drink, add a little more condensed milk.
- Pour into glasses and serve immediately.
