Simple is just great! Here is a simple and inexpensive lettuce salad you can make on the go and enjoy any time of the day.
The main ingredient for this salad is lettuce (iceberg), but you can use any type you have. Lettuce is a very versatile vegetable that is enjoyed globally. While they may look simple, they are packed with nutrients (vitamins and minerals) as well as chlorophyll and flavonoids such as quercetin, among others. So, enjoy whenever you can. 😊. Try it nuh!
INGREDIENTS
- 4.8 ounces Lettuce (or a small head of lettuce).
- 1 small or medium-sized cucumber.
- 1 small tomato.
- 2 tbsp lemon juice (more if needed).
- ½ tsp salt (or to taste).
- ½ tsp black Pepper (or to taste).
- 1 tsp maple syrup/honey or a little sugar (you can leave this out if desired).
- Optional ingredients if you have on hand:
- Purple onion. (I usually do most times but forgot to add it to this recipe 😊).
- Olive oil (as part of the dressing).
INSTRUCTIONS
- Wash and cut lettuce into bite-sized pieces (not too small).
- Wash, peel and cut cucumber regularly.
- Wash and cut tomatoes into small squares.
- Add all to a bowl.
- For Salad dressing.
- In a small bowl:
- Add lemon juice
- Add salt.
- Add black Pepper
- Maple syrup/honey/little sugar (optional).
- Mix all the ingredients well.
- Add to the salad bowl and combine well.
- Serve and enjoy.
Notes:
Remember to always soak your store-bought lettuce for a little bit (at least 10-15 minutes). I usually do so by rinsing and placing it in a bowl, and adding salt or vinegar. Then rinse and use. You can add more of each ingredient as needed. However, you may need to add more ingredients as well for the salad dressing.
As per the lettuce, I had purchased a few bags, and I used a 4.7 ounce/0.136kg bag, which is like a small head of lettuce. The lettuce used in this recipe was iceberg. So, you can use small quantities, especially if the salad will not be shared among many people.
Additionally, you can totally enjoy this salad as is or add your preferred dressing, but for me I love it without any additional dressing. It tastes great with the homemade dressing. Hope you enjoy it! 😊
