Colour Me Cabbage – A Nutritious Cabbage Recipe!

Ingredients

  • 1 medium-sized cabbage.
  • ¼ lb salt fish.
  • 2 to 3 medium/large carrots.
  • 6 okras, diced (not too thick and /or thin).
  • 4 cloves of garlic.
  • 1 small onion.
  • 1 small sweet pepper.
  • 1 ¼ tsp turmeric
  • Mixed vegetables (optional).
  • Black pepper to taste (for turmeric absorption).
  • Powdered seasoning of your choice paprika, onion, garlic etc (optional).

Directions

  • Soak salt fish in cold water for about an hour and then cook until tender (around 20 minutes). Cool, flake and deboned.
  • Wash and diced cabbage and carrots (to your liking).
  • Put a skillet or frying pan on the stove.
  • Add a little coconut/olive oil (enough to base the pan).
  • Allow the oil to become hot (but not too hot).
  • Add turmeric to hot oil and stir.
  • Add garlic, onion and sweet pepper, carrots and okra (all your seasonings) and stir. Add mixed vegetables and stir (optional).
  • Turn down the fire a bit, then cover and let simmer for a while (around 2-5 minutes).
  • Add cabbage and flaked salt fish and continue to stir.
  • Let it cook for about 10 minutes or until vegetables are tender to your liking.
  • Serve and enjoy with your choice of white or brown rice or ground provision (green bananas, yam, or even garlic bread (lightly toasted).

This cabbage meal can be eaten alone or be added to your favourite side dish – white rice, turmeric rice, ground provisions like green bananas, yam etc. and even bread.  It is healthy and quite filling. Cabbage is a member of the cruciferous vegetable family like cauliflower, bok choy and broccoli.  This vegetable, while not popular like its other famous counterparts is a  great source of calcium, potassium, vitamin B-6 and Thiamin (B1).  Cabbage also contains the antioxidants cholinebeta-carotenelutein and zeaxanthin which are all great for eye health.  It also contains the flavonoids kaempferolquercetin and apigenin which can help to build the immune system and promote healthy skin complexion, increase energy and weight management.
