• 1 cup salted codfish (saltfish), soaked and flaked

• 2 stalks scallion, chopped
• 1 clove garlic, minced
• 1 small or medium-sized tomato, chopped finely (optional)
• 1/2 tsp black pepper
• 1/2 tsp paprika (optional)
• 1/2 Scotch bonnet pepper (optional, finely chopped)
• 3/4 cup water (adjust as needed)
• Oil for frying

INSTRUCTIONS

• Scale (remove the scale) and clean the fish.
• Prepare the saltfish
  Soak and boil the saltfish to remove excess salt, then flake it, ensuring to remove the bones.
• Mix ingredients
  In a bowl, combine flour, saltfish, onion, scallion, garlic, and seasonings.
• Add water
  Gradually add water to form a thick batter (not too runny).
• Heat oil
  Heat oil in a frying pan over medium heat.
• Fry fritters
  Drop spoonfuls of batter into the oil and fry until golden brown.
• Drain and serve
  Remove and place on paper towel to absorb excess oil.
