Pasta salad is a common and favourite for many people, myself included. I truly love a good pasta salad. One reason these types of salads are common is that they are easy to prepare.
As long as you have some pasta around, vegetables, fruits or even meat kinds, you can put something together that tastes great and even filling. Most of my pasta is usually gluten-free, but for this easy pasta salad with alfredo sauce recipe, I used a regular pasta that I had and just wanted to use up. Try it nuh!
INGREDIENTS
- 3 cups pasta
- 6 Tbsp Alfredo Sauce (more if desired).
- ¼ chopped scallion (escallion or spring onion).
- 1 ½ cups mixed vegetables (I used frozen)
- ¼ cup Bell Pepper (any colour you have available).
- 3 Tbsp mayonnaise (optional).
- 1 tsp onion powder
- Pepper flakes to taste (also optional).
- A little Parsley flakes (optional).
- Salt and Pepper to taste.
INSTRUCTIONS
- Boil pasta according to package instructions.
- Drain and set aside.
- Prepare seasonings:
- Chopped bell pepper
- Scallion
- Cook mixed vegetables, drain and set aside.
- In a large bowl add pasta and all the seasonings/sauce:
- Alfredo Sauce
- Mayonnaise (optional)
- Onion powder
- Salt and Pepper to taste
- Pepper flakes to taste (optional)
- Combine all ingredients, ensuring that pasta is fully coated.
- Refrigerate to chill before serving.
- Sprinkle some parsley flakes (optional).
- Serve and Enjoy!
Notes:
Ensure pasta is not overcooked. As such, it should be firm/tender, not soft. Also, ensure pasta is cooked and cooled before you add the ingredients. Chilling it before serving is not a must, but it does add a nice touch. Hope you enjoy it!

~ Bell Peppers~
Bell peppers or paprika (the powdered version), is a fruit of the flowering part of a plant of the Capsicum Annuum family. You can find them in a variety of colours such as yellow, orange, green and red, etc.
These peppers are reportedly low in calories but very rich in nutrients such as vitamins A, E, C, K, B6 and folate. It is also rich in fiber and antioxidants.
Also, bell peppers do tend to add a rich flavour to any dish, and salads are no exception.
