- 1 cup salted codfish (saltfish), soaked and flaked
- 1 cup all-purpose flour
- 1/2 small onion, finely chopped
- 2 stalks scallion, chopped
- 1 clove garlic, minced
- 1 small or medium-sized tomato, chopped finely (optional)
- 1/2 tsp black pepper
- 1/2 tsp paprika (optional)
- 1/2 Scotch bonnet pepper (optional, finely chopped)
- 3/4 cup water (adjust as needed)
- Oil for frying
INSTRUCTIONS
- Scale (remove the scale) and clean the fish.
- Prepare the saltfish
Soak and boil the saltfish to remove excess salt, then flake it, ensuring to remove the bones. - Mix ingredients
In a bowl, combine flour, saltfish, onion, scallion, garlic, and seasonings. - Add water
Gradually add water to form a thick batter (not too runny). - Heat oil
Heat oil in a frying pan over medium heat. - Fry fritters
Drop spoonfuls of batter into the oil and fry until golden brown. - Drain and serve
