Got some turmeric rice leftover? Well, why not spice it up and make this simple and tasty dish? All you will need for this recipe is some stored turmeric rice, mixed vegetables, an egg, garlic and some other little spices. This is one of the ways I enjoy my turmeric and my white rice, which is not only filling but healthy! Try it nuh!
INGREDIENTS
- 2 cups cooked turmeric rice (please see recipe here).
- ½ cup sweet corn.
- ½ cup green peas.
- 4-5 cloves of garlic.
- 1 medium-sized onion.
- 1 small Bell Pepper.
- ¼ tsp. Garlic powder.
- ¼ tsp Paprika powder.
- 1 boiled egg (optional).
- 2 Tbsp. Cooking oil (Your preference).
- Salt and Pepper to taste.
INSTRUCTIONS
- Add cooking oil to the Frying Pan.
- Add Seasonings:
- Onion.
- Garlic.
- Bell Pepper.
- Sauté all for a few minutes as you do not want it to burn.
- Add cooked turmeric rice.
- Continue to stir while the ingredients come together.
- Add corn and green peas and continue to stir.
- Add powdered seasonings:
- Garlic powder
- Paprika powder
- Sauté for a few minutes.
- Serve and Enjoy!

Corn or maize is a common cereal grain that is eaten worldwide. It can be eaten whole or in its young state. As such, the more mature they are, the less edible they become.
Sweetcorn is a genetic version, which has more sugar but less starch.
Some of the nutrients in corn include fibre, calcium, iron, magnesium, phosphorus, potassium, zinc, and niacin among others. Corn is said to be able to help in the prevention of constipation due to its high fibre content, which might help to protect the heart as well as provide nutrients for eye and skin health.
