Looking for an eggnog substitute for Christmas or a drink packed with vitamins and minerals? Well, why not try this simple, yet nutritious punch? This is one of my favourite ways to use up my pumpkins and I thoroughly enjoy it every time I prepare it. With just a few ingredients, you can add another layer to your dining experience that will not only yield immediate success but become a year-long favourite. Try it nuh!
INGREDIENTS
- 3 – 5 medium slices of pumpkins (more if you like).
- 1 Tbsp Vanilla/Cinnamon.
- 1 ½ cups of Milk (your preferred choice).
- A dash of salt.
- Preferred Sweetener (to taste).
INSTRUCTIONS
- Peel and slice pumpkin (medium-sized).
- Cook the pumpkin until firm (not too soft).
- Let cool then add to blender.
- Add:
- Milk
- Vanilla/Cinnamon
- Salt
- Sweetener
- Blend all ingredients.
- Serve and Enjoy!
- Even nicer when chill!
Notes
You can add more pumpkin or milk, depending on your level of thickness or servings. Also, to make it a bit thinner or to get all those nutrients, you can use some of the same water the pumpkin was cooked in.

~ Cinnamon~
Cinnamon is a well-known spice that is obtained from the inner bark of many different species of the spice. It is used in many parts of the world to add aromatic and flavourings to a wide variety of cuisines, from savoury dishes to beverages.
Cinnamon is purported to be plentiful in many nutrients including vitamins A and C and minerals such as calcium, iron, and magnesium as well as antioxidants and anti-inflammatory properties. It is also purported to possess many health benefits which include reducing one’s risk of heart disease as well as lowering blood sugar levels.
It is certainly a spice that is worth adding to your dishes at every possible opportunity.
