Navigating a gluten-free or dairy-free lifestyle doesn’t mean you have to skip out on weekend brunch! These Fruity Oat Flour Pancakes are naturally gluten-free, completely free of cow’s milk, and packed with wholesome goodness. Oats are one of the absolute best ways to fuel your morning, and transforming them into fluffy, fruit-filled pancakes makes breakfast feel like a treat. They are healthy, incredibly filling, and seriously delicious. Try it nuh!
INGREDIENTS
- 1 ½ cups Gluten-Free Oat Flour.
- 1 egg.
- ½ cup unsweetened almond milk (you can also use coconut milk/other).
- 1 tsp vanilla.
- ½ tsp baking powder.
- ½ tsp Cinnamon powder.
- Fruits of your choice (strawberries, mangoes, peaches, pineapples, etc.).
INSTRUCTIONS
- Add the Frying Pan to the stove on minimal/high heat.
- Add oil to the Frypan (just enough to cover the frying surface).
- Combine wet ingredients:
- Add oat flour to the bowl.
- Add baking powder.
- Beat the egg in a bowl.
- Add vanilla and milk to the egg mixture.
- Add your wet ingredients to the flour mixture.
- Stir/blend until completely smooth.
- Add your mixture in small amounts to the Frying Pan (you can use a large spoon or your estimation).
- Cook pancakes (ensure that you start to see bubbles before you flip them over).
- Serve and enjoy with your favourite toppings and fruits.
Notes:
If the mixture is too thick, you can add more milk to achieve your desired consistency.
