Carrot, Banana Punch – A Christmas and Beyond Delight!

Eating our vegetables and fruits at times can be a daunting feat.  However, we can spice things up by blending.  This is just one such recipe. Here, carrots, a rich and nutrient-dense vegetable are combined with ripe bananas to make a thick, creamy and very delicious punch. Try it nuh!

INGREDIENTS

  • 3 small/medium-sized carrots.
  • 2 ripe bananas.
  • ½ tsp cinnamon powder.
  • Nutmeg (to taste).
  • ½ tsp vanilla.
  • ½ tsp. ground cloves (optional).
  • 2 ½ cups Milk (I use almond milk).
  • A pinch of salt.
  • 2 Tbsp Honey (or a sweetener of your choice).

DIRECTIONS

  • Clean/Peel, wash and boil carrots until cooked.
  • When carrots are cooked, place aside and let cool.
  • Add carrots and all the remaining ingredients to the blender.
  • Blend until smooth.
  • Serve and Enjoy. You can sprinkle some cinnamon on top.
  • Even more delicious when chilled. So, pop it in the fridge for a while.

Notes:

You can blend the carrots without blowing them. Just strain and add it to the blender along with the other ingredients.  You can then store the pulp of the carrot and use it for baking cookies, cakes, and other pastries.  This truly makes a very thick, creamy, and delicious punch. Plus, it is very filling. A high-speed blender would be preferable for this recipe. However, whichever blender you have, just blend until smooth and creamy.

~ Nutmeg~

Nutmeg (Myristica fragans) is a spice that is made from the seed of the nutmeg tree.  It has a very distinctive pungent fragrance and a slightly sweet taste.

Nutmeg is used to flavour many food kinds, mostly baked products, beverages, sauces, meats etc.  This spicy seed is packed with nutrients such as calcium, iron, magnesium, and potassium among others.
