Buckwheat Pancakes – A Gluten-free Alternative

Gluten intolerant are we? Well, here is a pancake recipe without gluten or cow’s milk that is healthy, filling and delicious.  Why not give it a try! 

INGREDIENTS

  • 1 ½ cups Buckwheat flour.
  • 1 egg.
  • ½ cup unsweetened almond milk (you can also use coconut milk/other).
  • 1 tsp vanilla.
  • 1 tbsp honey (or any other sweetener of choice).
  • ½ tsp baking powder.
  • A pinch of salt (I used Himalayan/ sea salt).
  • ¼ cup oats flour (optional).

DIRECTIONS

  • Add Frying Pan to the stove on minimal/high heat.
  • Add oil to Frypan (just enough to cover the frying surface).
  • Combine wet ingredients:
    • Add buckwheat flour to the bowl.
    • Add baking powder.
    • Add salt.
    • Add oats flour (optional).
  • Beat egg in a bowl.
  • Add vanilla, milk and sweetener to the egg mixture.
  • Add your wet ingredients to the flour mixture.
  • Stir/blend until completely smooth.
  • Add your mixture in small amounts to Frying Pan (you can use a large spoon or your estimation).
  • Cook pancake (ensure that you start to see bubbles before you flip them over).
  • Serve and enjoy with your favourite toppings and fruits.
Notes:

Ingredient Spotlight!

~ Buckwheat~

Buckwheat is an ingredient which is actually not related to wheat, but in reality, is the seed of a plant that belongs to the rhubarb and sorrel family.  It is gluten-free and as such, is an excellent alternative for those who are gluten intolerant.

Buckwheat is a good source of manganese (the forgotten nutrient) that helps with healthy bones as well as the proper functioning of the thyroid gland and sex hormones.  It also contains minerals such as copper, magnesium and phosphorus.  It is also high in dietary fiber and is considered a protein and antioxidants powerhouse.
